Laura Vitale’s recipe for her one pot chicken and rice meal is perfect if you’re looking to do something different. It’s got a lot of flavors and will definitely be a hit thanks to its Spanish-Influence spice!
You can use any kind of boneless chicken for this recipe, but Vitale uses boneless skinless chicken thighs. Either way, cut them into bit-sized bits. Chop all the peppers, onions, and garlic and set aside your long-grain rice, chicken stock, spices, and make sure you have a can of chopped tomatoes.
Heat up some vegetable oil in a ban and brown the chicken, it doesn’t need to be cooked all the way through yet because it’s going to continue cooking throughout the whole process.
Next you just add your peppers, onions, and garlic and season it with your spices. Add salt and pepper to your own taste. As things begin to cook down, toss in the rice and give it a big stir. Add the rest of the spices and your tomatoes and chicken stock. A real treat is if you also add a pinch of saffron.
Turn up the heat until the whole thing comes to a boil and then turn it back down to a simmer for 20 minutes. The meal will be ready to enjoy when the rice is fully cooked and your chicken is completely done. Simple, right?
