Max Bakker, a Master Cicerone, explains why we’ve been pouring beer wrong our whole lives.
For those who don’t know (ourselves included), a Master Cicerone is the fourth and highest level of a beer sommelier, a trained professional with “exceptional understanding” of brewing, drinking, and pairing beer who has encyclopedic knowledge of commercial beverages.
According to Bakker, it’s wrong to pour a beer down the side of a glass in an attempt to make as little foam as possible. A “perfect pour” should have a decent layer of foam on top to preserve the beer’s intended flavor and prevent excess gas from building up in your stomach.
