Sometimes you just need to take a break...

Twice-baked potato casserole is an easy recipe that everybody will love

The good folks with Gooseberry Patch have this recipe that was sent in to them by Emily Hutchins of Delaware, Ohio.

It doesn’t take much either, you just bake the potatoes, scoop out the good stuff and set the peels aside, add seasonings and butter with cheese to the potato mash in a bowl. Set aside those peels, you might want them later.

You add milk and continue to mix it until it’s all fluffy and melty. Then you stir in the sour cream and half the onions.

Spoon it all into a greased baking dish and sprinkle on the leftover cheese and some more onions and cook at 375 degrees Fahrenheit for about 15 minutes.

INGREDIENTS:

Green onions, chopped.
1/2 cup Sour Cream
1 cup Milk
2 cups Shredded Sharp Cheddar Cheese
1/4 cup Butter
1/4 teaspoon Pepper
1 teaspoon Salt
6 Potatoes
